Yes, okay. I'm done. You get it. It's hot.

But this is my first summer in New York and I've been dreading it since I moved here. I totally loved New York in the spring, but summer is a different animal. There's a blanket of heat that hangs over the buildings, seeps into your apartment and hits you like a ton of bricks when you walk out your front door.

It's not miserable, but ugh…I'm hot.

Luckily, there's ice cream. Seriously, thank goodness for ice cream. Isn't life just better with ice cream?

We have a few different scoop shops around us (is that lame, to say scoop shops?), but I've been on a mission to make my own. I keep seeing recipes like this, and this, and THIS, I even have a Pinterest board dedicated to frozen treats, and here I am with an ice cream maker just collecting dust in my cupboard.

Which brings me to this chocolate banana soft serve, which, you guessed it, doesn't require an ice cream maker! Yep, mine is still collecting dust, but I'm enjoying chocolatey banana goodness sprinkled with chopped almonds. Plus, it's low fat, low calorie and super healthy for you. My kind of summer dessert!

Banana soft serve is super easy to make. It's just frozen bananas, extra ingredients of your choice, thrown into a food processor and turned into ice cream. In less than five minutes, you have a smooth, creamy soft serve on your hands. It's perfect.

Ingredients

Instructions

  1. Add the bananas to a food processor fit with the steel blade and process until the bananas have started to blend together and form an ice cream. Add your remaining ingredients and process until smooth.
  2. If the mixture is too soft for your liking, pop it into a freezer safe container and freeze for 30 - 45 minutes.
  3. Scoop into serving dishes and enjoy!

  1. Yeah – it has been so, so hot lately! I’ve been experimenting with all sorts of healthy ice creams, fro-yo and popsicles. I love, love the idea of adding quinoa to this type of “soft serve” – BRILLIANT! Can’t wait to try this!

  4. Agh! I’m hot too, here in humid ol’ Maryland! Will definitely give this a try, it looks yummy and I love recipes with so few ingredients. Question – for nut butter do you mean Nutella, peanut butter or something else?
