Gluten-Free Banana Donuts

I woke up this morning with a major hankering for a donut.

Mind you, this rarely happens. Donuts aren't really my thing (I much prefer pancakes for breakfast), but they're pretty much Matt's favorite, so when this craving hits I better get to baking. His absolute favorite is a glazed chocolate, but those don't tend to be the healthiest option. So instead, we have my version: baked banana donuts with a dairy-free chocolate glaze. Topped with toasted almonds and coconut of course.

If you're a fan of baked donuts like we are, these are pure perfection. They're light, fluffy and tender with a delicate cake texture and a subtle banana flavor. And bonus they're made in a blender!

Not just any blender though. These are made in my new BlendTec Designer 725 blender. Now if you've followed SQ for a while then you know that I've been a longtime BlendTec fan. I've shared blender pancakes before, but these donuts, which are made solely in the blender, are to die for.

Unlike other gluten-free donuts, these babies have very little sugar (only two tablespoons of maple syrup!), almost no oil AND they don't have any xathan or guar gum. The base is a simple blend of almond flour and quinoa flour. The almond flour makes these donuts extra light and the banana gives them the extra sweetness without added sugar. The donuts are moist and soft, and when they're dunked in this dairy-free chocolate glaze? Oh they are amazing!

Instructions
 

  • Preheat the oven to 350 degrees F. Grease a donut pan with nonstick spray and set aside.
  • Into the blender, add the wet ingredients as well as the banana. Blend on low until smooth.
  • Add the dry ingredients and blend using the Salsa/Dip setting on your BlendTec Designer 725 blender until completely smooth. Let the batter sit for 10 minutes before baking.
  • Fill the donut rounds 2/3 of the way full. Bake on the center rack for 10 - 11 minutes until a toothpick inserted into one of the donuts comes out clean.
  • Turn out donuts onto a wire rack and cool for 10 - 15 minutes.
  • While cooling, prepare the glaze by melting the chocolate chips with the coconut oil. Whisk in the cocoa powder. Dunk the donuts into the glaze, letting the extra drip off and then roll them into your desired toppings.
  • Cool completely before enjoying.
