Mango Cardamom Juice

I have been taken over by a mango obsession. I don't know why or how, but lately all I want is mango. Mango everything.

Mangoes are a fruit that I have a particular fondness for. Not only do they taste absolutely amazing, they are one of those foods that transport me back in time with every bite. You know those tastes that your body recognizes and immediately brings to life an old memory? Mangoes do that for me.

Mango Cardamom Juice

I can still remember the first time I had mango. I was on a family vacation in Costa Rica and we were driving along an old dirt road, when we spotted a woman and her child selling mangoes on the side of the road. It was a mini farm stand at the end of a long driveway that led to a giant mango farm. We stopped, spoke with her in Spanish and snacked on mangoes.

The mangoes were out of this world amazing. Perfectly ripe and insanely juicy. They were melt in your mouth good. And they just got better with every bite. I was blown away. My world of tropical fruit had a whole new player in the game.

Costa Rica is one of my favorite countries in the world. It's lush vegetation and jungle, it's breathtaking beaches, the relaxed culture and welcoming people is the reason why I have been back three times. My most recent trip was right after my college graduation, and Mr. Henderson and I took off for 6 weeks. We traveled around the country, with no real direction, just went where we wanted to go. The trip was amazing – something I will hold onto for the rest of my life.

Mangoes take me to this place. A happy place for me. So every time I eat a mango, I'm filled with happiness.

Mango Cardamom Juice

This is a new juice recipe that was inspired by one of my favorite smoothies. It mixes together great tropical flavors, but ties in cardamom, giving it an almost Indian quality. Sweet, with a burst of bright citrus flavor, this juice is a new favorite in our house.

Ingredients
  

  • Mango Cardamom Juice
  • serves 2 small juices or 1 large juice
  • 1 ripe mango peeled and cut into large chunks
  • 1 tangerine
  • 1/2 cucumber
  • 3 celery stalks
  • 1 large carrot cut into thirds
  • 1 inch fresh ginger
  • 1 teaspoon cardamom
  • Dash of cinnamon optional

Instructions
 

  • Put all the fruit, vegetables and ginger through a juicer. Add cardamom and stir to combine. Garnish with a sprinkle more of cardamom or a dash of cinnamon and enjoy!

Notes

Reserve the juice pulp and add it to your next smoothie!
