French toast muffins are a cross between traditional French toast and muffins. These healthy little bites of heaven are the ultimate morning treat, with Sunday morning breakfast vibes in a grab-and-go form perfect for weekday mornings. Plus, we throw in some fruit for good measure!

So basically here's what we're looking at today: vegan French toast, made into muffins, flavored with apple and cinnamon, topped with maple syrup. I mean…how dreamy does that sound!?

  • Portable. Rather than taking a slice or two of French toast to the office, you can take two little muffins, reheat them, top them with some syrup (or peanut butter) and you've got breakfast. There's nothing better than not having to worry about breakfast in the morning!
  • Easy. So yes, they use only 6 ingredients. But they're also ready pretty darn quickly and they're meal prep friendly. They bake in about 35 minutes and will keep in the fridge for 4 to 5 days!

  • Healthy. And yes, they're still healthy too! I like to use whole grain bread to make sure I'm getting in fiber and complex carbohydrates, but we're also getting sweetness naturally and extra fiber from the fruit!

  • Gluten-free bread – Of course, if you’re not gluten-free, you can use a whole grain bread of your choice.
  • Almond milk – Or another unflavored, unsweetened plant milk.
  • Flax eggs – Here’s how to make flax eggs.
  • Maple syrup – Be sure to use real maple syrup, not pancake syrup!
  • Cinnamon – Ground cinnamon adds ALL the cozy flavor, but apple pie spice would also be fab.
  • Apples – I like an apple with a nice sweet-tart balance, like Honeycrisp.

How to Make French Toast Muffins

  • Prepare the bread. Cut the bread into cubes and add them to a mixing bowl.
  • Make the vegan custard. Beat together the milk, eggs, syrup, and cinnamon. 
  • Assemble. Pour the custard over the bread cubes, then fold in the apples. Divide the French toast muffin mixture into 12 cups in a muffin pan.
  • Bake. Place the pan in the oven and bake at 350ºF for 35 minutes, or until baked through. Serve with maple syrup.

Tips for Success

  • Cut the bread into small-ish cubes. You want to be able to pack it tightly into the muffin cups so your French toast muffins hold together!
  • Double or triple this recipe for meal prep. These French toast muffins make a great weekday breakfast when you don't have much time in the morning, so why not make an extra big batch?
  • Use stale bread for best results. If you've got some bread that's past its prime, don't throw it out! Stale bread actually works best for French toast, as it will soak up the custard mixture without getting too soggy.

  • Add other fruits. Instead of apples, try adding in some diced peaches in the summer or berries in the spring to switch things up with seasonal fruit.

  • Try different spices. Cardamom, pumpkin pie spice, and nutmeg would all be delicious in this recipe.

I love French toast muffins with a little maple syrup. But if you're not feeling the sweetness, there are lots of other ways to serve them too!

How to Store

Store any leftover French toast muffins in an airtight container in the refrigerator for up to 4 days. To reheat, pop them in the microwave for 30-60 seconds or until heated through. A 350ºF oven also works, but they'll take a bit longer!

Can I Freeze This Recipe?

Yes, you can freeze these French toast muffins for up to 3 months. To freeze them, let them cool completely, then transfer them to a freezer-safe bag or container. When ready to eat, thaw in the fridge overnight and reheat in the microwave or oven.
