Veggie Wraps with Quinoa

It's day 6 of my cleanse and I'm craving two things: solid food for dinner and wine. Especially the wine.

The soups I can handle, I just wish it wasn't so hot out because I feel like I'm in an inferno sitting in my living room, on a suede couch with a steaming bowl of soup in my lap. I'm sweating just thinking about it. And yes, if you're wondering, I always eat dinner on my couch.

Why? Because we don't have a dining room table. Actually, we don't have any table whatsoever (much to my mother's chagrin). We live in New York City, space is extremely limited, and for a great kitchen, we gave up space for eating. So we eat on the couch. We make compromises for what's important, huh?

Anywhoo…back to what I'm eating. Lots of yummy smoothies and soups of course, but the lunches are my favorite. I've been eating these veggie wraps for the past three days and they are now one of my favorite meals. One that I'm definitely going to be enjoying long after the cleanse.

I started with  my fave gluten-free tortillas, the brown rice version from Trader Joe's (the non-TJ brand is Food for Life), then added homemade hummus, quinoa, carrots, cucumbers, avocado, and greens. So easy, but seriously so tasty!

So easy in fact, I've giving you a step-by-step tutorial of how to put it together. This is my first tutorial, so let me know what you think. I was hoping it would be easy for you to pin and save for later!!

Veggie Wraps with Quinoa

I've been eating these veggie wraps for the past three days and they are now one of my favorite meals.

Ingredients
  

  • 1 brown rice tortilla
  • 2 tablespoons hummus
  • 1/4 cup cooked quinoa I used rainbow
  • 1 small carrot grated
  • 1/2 small cucumber sliced
  • 1/4 avocado sliced
  • 1 handful greens

Instructions
 

  • Assemble the ingredients inside the wrap in the order listed. Roll it up and enjoy!

    So, I have been reading your post’s about a quinoa wrap, and I have run into the same problems with finding a wrap that doesn’t crumble on me, but not anymore! I finally found my absolute fav, quinoa tortilla. all you have to do is pre soak 1/2 cup quinoa, about 6-8 hours. then when drained put through your food processor with 1/2 cup of water and about 1/4 tsp sea salt. it might take a while depending on the power of your processor, but keep blending till its a nice smooth batter. pour some of that batter in a skillet and cook that baby up in some coconut oil like you would for a crepe, and your good to go

  4. Do you have a compatible sauce to throw on it? I love wraps, but strangely enough, they make me choke (choke very seriously, too). If I put a sauce or dressing, it’s fine. Most recipes call for balsamic vinaigrette, but I think that overpowers the other ingredients. Suggestions? Thanks!

  5. I have had the rice wraps but when I go to use them they are so dry they crack can’t roll…do you do anything to the wraps first?

    1. Sometimes I think steaming them works. If you have a microwave, I would put them between two damp paper towels and zapping them for like 20 seconds. That should soften them up a bit. I have the same problems. And thanks for the good wishes 🙂

  6. How do you get those wraps to roll up without cracking? I use those at times and seem to struggle with that, despite heating them up

    1. Honestly, a lot of times they do break and I struggle with that too. I find that I sometimes have to wrap them in tinfoil or wax paper to help me eat them. As other readers commented above, I’m going start perfecting a quinoa tortilla. Will definitely be back with the recipe as soon as I get it right 🙂

  7. These look so yummy, Alyssa! Ugh, and wine…when I did my first candida cleanse in July and August I craved wine like a madwoman! The good news is that craving does subside!

  8. Do you use any sauces with your wrap? I love making fresh spring rolls with rice paper wraps. So easy. Cheat by using broccoli slaw mix then adding Thai basil and cilantro. Can also add grilled shrimp or another grilled meat such as chicken, steak or pork. Serve with sweet Thai chili sauce or peanut butter sauce.

    1. LOVE spring rolls! They’re a favorite over here. Some sauces I like to use are tahini dressings and other creamy vegan dressings. Or sometimes just a drizzle of balsamic. yum!

  9. Wow, I thought I was the only one allergic to rice. I would also love to find a tortilla made out of quinoa since I am also allergic to wheat!!!

        Ingredients
        375 grams Quinoa Flour
        50 grams quinoa (seeds)
        15 grams sea salt
        187.5 grams water (lukewarm)

  10. Awesome tutorial…but I need a tortilla made of quinoa, as I’m allergic to rice…What bad luck I have, huh…I”m also allergic to carrots. eeeek! And I love wraps so much. 🙁 Poor me…lol

    I”m on a fast as we speak, so this looks extra delicious since I haven’t eaten for two days!
