This is my family's favorite healthy potato salad with eggs, crunchy celery and creamy yogurt-mayo dressing. It's light, savory and perfect for summer picnics.

First, boil your potatoes. Use 3lbs of russet potatoes and cover them with 2" of water and bring to a simmer. Simmer for 30ish minutes until the potatoes are fork-tender.

Next, boil your eggs. Cover 6 eggs with 2" of water and bring to a simmer. Simmer for 20ish minutes then drain and allow to cool.

Allow the potatoes and eggs to cool completely then peel the skins off the potatoes and the shells off the eggs. Give them a large dice.

Add the chopped potatoes and egg into a bowl along with finely chopped celery and sweet white onion.

Make the dressing by combining mayo, yogurt, red wine vinegar, mustard, paprika, salt and pepper.

Pour the dressing over the salad ingredients and toss it all together. Once combined, sprinkle with scallions!

Store in the fridge for at least 30 minutes before serving. This healthy potato salad pairs well with any summer meal!
