Wrap tofu in dish towel to drain. Then mix together the soy sauce, vinegar, gochujang, sesame oil, garlic, and maple syrup.

Chop the tofu into ½-inch thick pieces.

Toss tofu and sauce in a container or bag, seal, and refrigerate to marinate.

Mix the cornstarch and salt together and dip each side of the tofu into the mixture.

Place the pieces of tofu on the parchment paper-lined baking sheet, or in an air fryer basket.
