These Vegan Granola Cups are made with almond butter, flaxseed and rolled oats and filled with dairy-free yogurt and colorful fresh fruit for a healthy snack or breakfast.

Mix together all the cup ingredients – oats, maple syrup, almond butter, coconut oil, flaxseed meal, cinnamon and salt.  The "batter" should be sticky.

Scoop 1/4 cup of the oat mixture into each muffin cup.

Using damp fingers, press the oat mixture into the center and up the sides of each cup.

Bake for 25 - 30 minutes until the cups are golden brown and crispy.

Fill each cup with your favorite yogurt! We love using coconut yogurt!

And then top them with some fruit – fresh berries, kiwis and mango is a great combination. Finish with some coconut and chia seeds!
