These Strawberry Oatmeal Bars are a healthy dessert with almond flour, quinoa flour and flax that's gluten-free, vegan and full of summery fruit flavor.

In a large mixing bowl, whisk together oats, almond flour, quinoa flour and salt.

Mix in the maple syrup and coconut oil.

Crumble with your hands until it resembles a coarse, sandy texture. Reserve 1/2 cup of the dough for the topping.

Stir in the flax egg to create your base dough.

Transfer the dough into a greased and parchment-lined baking pan and press it evenly into the pan.

Bake at 350ºF for 15 minutes.
