Strawberry Spinach Salad with Toasted Quinoa

Strawberries + spinach + almonds + toasted quinoa. All drizzled with a minty honey-lime dressing. Pretty much sums up everything I love about summer in one giant salad.

  • 5 oz container fresh spinach about 6 cups
  • 1 pint fresh strawberries about 2 cups, quartered
  • 1 cup chopped almonds
  • 1/4 cup toasted quinoa cooled (check out this post for a tutorial)

for the dressing:

  • 1/4 cup olive oil
  • Juice of 1 lime
  • 1/2 teaspoon honey
  • 1/4 cup fresh mint
  • Salt + pepper to taste


  1. Place all dressing ingredients into a blender and blend on high until smooth. Taste and season with salt and pepper.
  2. In a large bowl, add spinach and top with strawberries, almonds and quinoa. Pour dressing over salad and toss to coat.
  3. Serve immediately or store in the fridge for up to two hours before serving.
