Ingredients

English cucumber

red onion

sour cream
(or greek yogurt)

plain hummus

Generous pinch of salt and pepper

fresh dill
Instructions
Finely slice the cucumber and onion and transfer them to a mixing bowl. I like to do this with a mandolin slicer so it's quick and has even thickness.
In a small bowl, combine the remaining ingredients. Pour the dressing over the cucumber and onion and stir to combine.
Serve immediately or store in the fridge up to 8 hours before serving.
