Chewy Almond Flour Sugar Cookies

These chewy almond flour sugar cookies are a healthy sweet treat. They're grain-free, paleo, vegan and are even topped with a healthy chocolate frosting!

Instructions

  • Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the dry ingredients. Add flax egg, syrup and coconut oil to the bowl and mix together with a spatula until it forms a thick, pliable dough.
  • Roll pieces of dough in your hands to form tablespoon-sized balls. Place each ball on the baking sheet and repeat until no dough remains. Gently flatten with your hands and bake on the center rack for 10 minutes.
  • Remove from oven and allow to cool completely before frosting.
  • For the frosting, add all the ingredients into a blender or food processor and process until smooth. Taste and add more syrup if desired.
  • Once cooled, frost each cookie with 1 tablespoon of frosting and top with sprinkles.

* if you don't have vanilla powder, you can use 1/2 teaspoon of vanilla extract instead and add it in with the wet ingredients.
