There's something so special about making a batch of cookies. it's a therapeutic thing for me; calms my mind, relieves stress, and makes my tummy happy all at the same time.

And while baking them for me and Matt certainly makes my heart sing, whipping up a batch for a friend or loved one makes it a million times more rewarding. I always like to time my baking to when I know I'm going to see a friend later that day or am heading home to visit my parents. Seeing the smiles on their faces when I hand them a package of healthy, homemade baked goods? There's almost nothing better!

Now, it's time to give you a recipe that is perfect for your baking care package: Chewy Almond Flour Cookies!

These are a healthy spin on a sugar cookie, that has the most amazing texture! They're crispy on the outside, super soft on the inside and are topped with my secret ingredient vegan chocolate frosting.

The frosting is actually made from a base of sweet potatoes which makes it fluffy and rich! Trust me, you'll never know this frosting is actually healthy!

This HEALTHY Chocolate Frosting is made with a secret ingredient...sweet potatoes!

The base of these little sugar cookies is blanched almond flour, and what I love about Bob's Red Mill is that you can also get pretty much all of the other ingredients you need for this recipe right on their website!

We're also using their coconut flour, flaxseed meal, baking soda and arrowroot powder for the frosting.

They really are a one-stop-shop for all your baking needs!

I wanted to make these cookies look extra special, so I decided to frost them and add some sprinkles on top.

And just like the article says, baking these cookies made me feel so good inside.

Chewy Almond Flour Sugar Cookies

These chewy almond flour sugar cookies are a healthy sweet treat. They're grain-free, paleo, vegan and are even topped with a healthy chocolate frosting!

Ingredients

for the cookies

  • 1 1/4 cups almond flour
  • 2 tablespoons coconut flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla powder*
  • 1 flax egg 1 T flaxseed meal + 3 T water
  • 1/4 cup maple syrup
  • 2 tablespoons coconut oil

for the frosting

Optional

  • Sprinkles to garnish

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients. Add flax egg, syrup and coconut oil to the bowl and mix together with a spatula until it forms a thick, pliable dough.
  3. Roll pieces of dough in your hands to form tablespoon-sized balls. Place each ball on the baking sheet and repeat until no dough remains. Gently flatten with your hands and bake on the center rack for 10 minutes.
  4. Remove from oven and allow to cool completely before frosting.
  5. For the frosting, add all the ingredients into a blender or food processor and process until smooth. Taste and add more syrup if desired.
  6. Once cooled, frost each cookie with 1 tablespoon of frosting and top with sprinkles.

Recipe Notes

* if you don't have vanilla powder, you can use 1/2 teaspoon of vanilla extract instead and add it in with the wet ingredients.

  1. These cookies are delightful! I highly recommend keep in fridge and eating cold, delicious. The frosting tasted like sweet potato however, so next time I think I will put a coating of peanut butter on them!

  2. Any suggestions to make it nut-free so kids can take these to school? i.e.: option to replace the almond flour? Thank you. They look delicious!
