There's something so special about making a batch of cookies. it's a therapeutic thing for me; calms my mind, relieves stress, and makes my tummy happy all at the same time.
And while baking them for me and Matt certainly makes my heart sing, whipping up a batch for a friend or loved one makes it a million times more rewarding. I always like to time my baking to when I know I'm going to see a friend later that day or am heading home to visit my parents. Seeing the smiles on their faces when I hand them a package of healthy, homemade baked goods? There's almost nothing better!
Which is actually the theme behind today's post. We're making chewy almond flour sugar cookies and chatting all about how baking for loved ones is actually beneficial for our health.
Today I'm partnering with my friends at Bob's Red Mill to bring light to the small sign of love that we're showing, perhaps without even realizing that's what we're doing.
Many of us bake because we love it. We bake to take our mind off things. We bake to make our families happy. We bake to celebrate milestones in our lives like birthdays, weddings and holidays.
But really, the underlying theme of why we bake, often times leads back to the fact that we're actually baking to show someone that we care. That we're thinking of them. That we're there for them. That we love them.

It's definitely worth a read if you're a baker and/or if you have someone in your life right now that could use some extra love.

So basically, the moral of this story is that I encourage you to get in the kitchen and whip up something sweet for a person in your life who might need some love.
It could be your neighbors, your friends, family or even your local fire station. Not only will they feel loved, but you'll feel so much better int he process!

These are a healthy spin on a sugar cookie, that has the most amazing texture! They're crispy on the outside, super soft on the inside and are topped with my secret ingredient vegan chocolate frosting.
The frosting is actually made from a base of sweet potatoes which makes it fluffy and rich! Trust me, you'll never know this frosting is actually healthy!
The base of these little sugar cookies is blanched almond flour, and what I love about Bob's Red Mill is that you can also get pretty much all of the other ingredients you need for this recipe right on their website!

I wanted to make these cookies look extra special, so I decided to frost them and add some sprinkles on top.
And just like the article says, baking these cookies made me feel so good inside.
I have a cousin who is struggling with some health issues and I know she will absolutely love opening a care package and finding these cookies inside.
I've wrapped them up in some foil, wrote a little note telling her I love her and that she's in my thoughts and off they go.

for the cookies
- 1 1/4 cups almond flour
- 2 tablespoons coconut flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/4 teaspoon vanilla powder*
- 1 flax egg (1 T flaxseed meal + 3 T water)
- 1/4 cup maple syrup
- 2 tablespoons coconut oil
for the frosting
- 1 cup mashed sweet potato
- 1/4 cup maple syrup
- 2 tablespoons coconut oil
- 1/4 cup raw cacao powder
- 1 tablespoon arrowroot powder
- Sprinkles to garnish
Preheat the oven to 350ºF and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the dry ingredients. Add flax egg, syrup and coconut oil to the bowl and mix together with a spatula until it forms a thick, pliable dough.
Roll pieces of dough in your hands to form tablespoon-sized balls. Place each ball on the baking sheet and repeat until no dough remains. Gently flatten with your hands and bake on the center rack for 10 minutes.
Remove from oven and allow to cool completely before frosting.
For the frosting, add all the ingredients into a blender or food processor and process until smooth. Taste and add more syrup if desired.
Once cooled, frost each cookie with 1 tablespoon of frosting and top with sprinkles.
* if you don't have vanilla powder, you can use 1/2 teaspoon of vanilla extract instead and add it in with the wet ingredients.
