Ingredients

ripe peaches
pitted and diced

red onion diced

ripe tomato

jalapeno pepper
seeded and diced

chopped cilantro

Salt & pepper to taste
Instructions
Add the ingredients to a mixing bowl and stir with a wooden spoon until everything is fully combined.
Notes
To Make Grilled Peach Salsa:
Preheat a cast iron grill pan (or charcoal / gas grill) on medium high heat.
When the pan or grill is piping hot, brush the peaches (quarter them instead of dicing) with olive oil and place them flesh side down on the grill.
Grill 5 - 8 minutes, rotating if needed, until the peaches are softened but not mushy.
While the peaches are cooking, add the remaining ingredients to a mixing bowl and stir with a wooden spoon until everything is fully combined.
Once the peaches are done cooking, remove them from the grill and transfer them to a cutting board.
Dice the peaches and add them to the bowl.
Toss together and serve.
