Ingredients
2
ripe peaches
pitted and sliced in quarters
1/2
red onion diced
1
ripe tomato
diced
1
jalapeno pepper
seeded and diced
2
tablespoons
chopped cilantro
1/2
lime
juiced
Salt & pepper to taste
Olive oil / olive oil spray
Instructions
Preheat a cast iron grill pan (or charcoal / gas grill) on medium high heat.
When the pan or grill is piping hot, brush the peaches with olive oil and place them flesh side down on the grill.
Grill 5 - 8 minutes, rotating if needed, until the peaches are softened but not mushy.
While the peaches are cooking, add the remaining ingredients to a mixing bowl and stir with a wooden spoon until everything is fully combined.
Once the peaches are done cooking, remove them from the grill and transfer them to a cutting board.
Dice the peaches and add them to the bowl.
Toss together and serve.
