This edible brownie batter recipe (and my Cottage Cheese Cookie Dough) will take you back to those glory days, minus the salmonella—with the added bonus of protein. Best snack ever!

I’ve been keeping a stash of this protein brownie batter in my fridge for post-workout snacking and healthy desserts. It’s SO good, you just have to try it! Here’s why you’ll love it:

What You’ll Need

  • Full-fat cottage cheese – Using full-fat adds a creamier texture and makes your edible brownie batter more satisfying.
  • Maple syrup – Honey or agave nectar can be used as a substitute, and so can stevia or other low-carb sweeteners.
  • Almond milk – Or your favorite milk. You can work some extra protein in by using a higher protein milk option.
  • Nut butter of choice – I like peanut butter, but almond butter or sunflower seed butter are great too.
  • Vanilla extract  
  • Unsweetened cocoa powder – Cacao powder also works; it’s less processed than cocoa powder.
  • Chocolate protein powder – Any kind you like or have on hand in your pantry.
  • Blanched almond flour 
  • Mini chocolate chips – Or dark chocolate chunks or cacao nibs.

How to Make Edible Brownie Batter

  • Blend. Combine the cottage cheese, maple syrup, almond milk, nut butter, vanilla extract, cocoa powder and protein powder in a food processor or blender. Blend until the mixture is completely smooth.
  • Add the almond flour. Transfer the cottage cheese mixture to a mixing bowl and stir in the almond flour.
  • Add the chocolate chips. Stir in the chocolate chips or any other add-ins.

Tips for Success

Here are tips for making the best edible brownie batter ever!

  • Make sure the curds are completely blended out. They kind of ruin the brownie batter vibe!
  • Chill it for at least 30 minutes. This step is optional, but I highly recommend it. It allows the almond flour to hydrate and gives the brownie batter a better texture.  
  • Adjust the consistency as needed. If you prefer a thicker batter, add more almond flour until you reach your desired texture. If you want a thinner batter, simply add more almond milk. (After storage, you might need to thin it out with more almond milk too.)

Variations

You can add toppings and mix-ins to this edible brownie batter to make it your own. Here are some ideas:

  • Make it nutty. If brownies with walnuts are your fave, add a handful of chopped walnuts to the batter for some crunch.
  • Give it a swirl. Swirl in almond butter, cherry jam, or caramel.

How to Store Leftovers

  • Refrigerator: Store edible brownie batter in an airtight container in the fridge for up to 4 days.
  • Freezer: You can also freeze the batter for up to 3 months. Thaw it in the refrigerator or eat it from frozen, like ice cream. Just let it soften a bit first.

  • Add the cottage cheese, maple syrup, almond milk, nut butter, vanilla extract, cocoa powder and protein powder to a food processor or blender. Blend until smooth. You should have a creamy mixture without any lumps.
  • Transfer the blended cottage cheese mixture into a mixing bowl. Add the almond flour and stir until combined. Because cottage cheese moisture content can vary you may need more almond flour to achieve the consistency you like.
  • Stir in chocolate chips or any other add-ins you'd like (see notes).
  • You can eat it right away, I recommend chilling the dough for 30 minutes to an hour before serving. Chilling will allow the almond flour to absorb more moisture and result in a better texture. Store in an airtight container in the fridge for up to 4 days
