Happy Birthday to Queen of Quinoa!
Yes, that's right. Queen of Quinoa is turning one year old today! I can't tell you how excited I am to share this moment with you. You are so special to me, and I wouldn't be here today without you.
I can't believe an entire year has passed.
It feels like time has just flown by. Like it was yesterday when I was hitting ‘publish' for the first time. That moment of trepidation and fear, when I was so unsure if anyone would find me or even read my recipes. But now, I have you. And I'm so very lucky that I do.
It's been a year full of fun, laughs, inspiration, joy, the occasional cry, a little frustration from time to time, a few ruined recipes, accompanied by many successes. But most importantly, it's been a year full of happiness and growth. I've met amazing people, discovered incredible blogs and uncovered a whole new world of food.
Cooking, writing, photographing, tasting, and experimenting with food has changed my life. In every way that I could have hoped that it would.
So, thank you. Thank you for being you. For reading and for following. For testing my recipes and sharing what you think. ย Thank you for being there for me.
I can't wait to celebrate a hundred more of these birthdays with you.

What better way to celebrate than with a margarita? And since it's the end of summer, we should celebrate in style. With my all time favorite summer cocktail. Watermelon Margaritas!
Watermelon Margaritas
Ingredients
- 2 cups fresh watermelon
- Juice of 2 limes about 1/4 cup
- 1/2 cup tequila
- Stevia to taste I use about 1/2 - 3/4 teaspoon
- 6 ice cubes
Instructions
- Add all ingredients to a high speed blender.
- Blend on high for 1 minute, until the ice cubes are crushed.
- Serve and enjoy!
