Fruit Pizza

With a vanilla cookie crust, Greek yogurt frosting, and lots of colorful fresh fruit, this fruit pizza recipe makes for a fun dessert when you want to keep things on the healthy side!

Some fruit pizza recipes look healthy on the surface, but underneath the fruit is sugar—sugary frosting, sugar cookie crust, and sometimes even a sugar syrup on the fruit itself. You know what? We don't need it! This fruit pizza is refined sugar free and it's even more delicious because all the fruit really takes center stage. Serve this for kids' parties, picnics, or as a special after school snack!

What You’ll Need

Crust 

  • All-purpose flour – Or use a measure-for-measure gluten-free flour to make a gluten-free dessert pizza.
  • Baking powder
  • Salt 
  • Refined coconut oil — This should be room temperature. Refined coconut oil doesn't have the coconut flavor that virgin coconut oil has.
  • Coconut sugar — This has a little more depth than regular granulated sugar. It's worth seeking out!
  • Maple syrup 
  • Egg — Let this come to room temperature.
  • Vanilla — You can also use half the amount of vanilla extract and use almond extract for the other half. This gives the crust a classic sugar cookie flavor.

Frosting

  • Full-fat Greek yogurt — Or your favorite plant-based Greek yogurt. I use plain and flavor it with maple syrup and vanilla, but you can use a flavored yogurt and skip the additions.
  • Maple syrup
  • Vanilla 

Fruit topping 

  • Kiwi
  • Peaches — Or nectarines!
  • Strawberries
  • Grapes — I used red grapes. 
  • Blueberries — Make sure these don't have any little stems attached.

How to Make Fruit Pizza

  • Strain the yogurt. Add the yogurt to a cheesecloth-lined mesh strainer and refrigerate overnight. Discard the liquid.
  • Prepare. Preheat your oven to 360°F and grease a cake pan. 
  • Mix the dry ingredients. Whisk the flour, baking powder, and salt in a mixing bowl.
  • Combine the wet ingredients. Beat the coconut oil and coconut sugar for 2 minutes, then mix in the maple syrup, egg, and vanilla. 
  • Put it all together. Mix the dry ingredients into the wet ingredients.
  • Bake. Press the cookie dough into the bottom of the prepared cake pan. Bake for 10 minutes. Let the crust cool completely in the pan.
  • Make the frosting. Beat the Greek yogurt, maple syrup, and vanilla until smooth. 
  • Assemble. Turn out the crust onto a serving plate and spread the frosting over the top. Arrange the fruit over the frosting, then slice and serve.

Tips and Variations

  • Don't over-bake the crust. The crust should be chewy, not crisp and crumbly, so it's important not to over-bake it! Keep a close eye on it at the end of the cooking time.
  • Make sure the fruit is dry. If the fruit is freshly washed, it will release moisture onto the frosting and make it watery, which can in turn make the crust soggy.
  • Switch up the frosting. Instead of Greek yogurt frosting, try coconut butter, almond butter, or whipped coconut cream. Sweetened cashew cream would also work!
  • Get creative with toppings. Feel free to use any combination of fruit that you like—blackberries, raspberries, apricots, etc. You could also add shredded coconut for added texture and tropical flavor.
  • Make it mini. For personal fruit pizzas, use individual-sized tart pans instead of a larger cake pan and cut down the baking time. Then everyone can decorate their own pizza with their favorite fruit!
  • Get a head start. You can bake the cookie crust and prepare the frosting ahead of time, then assemble the pizza right before serving.

How to Store

Store any leftover fruit pizza in an airtight container in the refrigerator for 2 to 3 days; the exact storage life depends on how fresh your fruit was when you made the recipe.

Can I Freeze This Recipe?

You can freeze the cookie base for this recipe and then make the frosting and decorate with the fruit before serving. The fruit pizza crust will last for 2 months in the freezer.

Ingredients
  

Crust

Frosting

  • 1 ½ cups full-fat Greek yogurt OR plant-based Greek-style yogurt
  • ¼ cup maple syrup
  • 1 teaspoon vanilla

Fruit topping

  • 3 sliced kiwis
  • 1 ½ cup peaches
  • 1 cup sliced strawberries
  • ½ cup halved grapes
  • A handful of blueberries

Instructions
 

  • Line a mesh strainer with a piece of cheesecloth that’s been doubled over. Add the Greek yogurt and twist the cheesecloth tightly around the yogurt. Secure the top with a rubber band and place the strainer over a bowl. Chill in the fridge overnight. Discard the liquid that gathers in the bowl. Set the strained yogurt aside while you make the cookie crust.
  • Preheat the oven to 360°F and liberally grease a 12-inch cake pan.
  • In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  • In another, larger mixing bowl, beat together the coconut oil and coconut sugar for 2 minutes. Mix in the maple syrup, egg, and vanilla.
  • Mix the dry ingredients into the wet ingredients just until combined. Don’t over-mix.
  • Press the cookie dough into the bottom of the prepared cake pan in an even layer. Bake for 10 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cookie crust to cool completely in the pan.
  • Beat together the Greek yogurt, maple syrup, and vanilla until smooth.
  • Once the crust has cooled completely, turn it out onto a serving plate. Spread the frosting over the top and arrange the fruit artfully over it.
