Cookies for breakfast? You heard that right! I love making healthy breakfast cookies for those busy weeks when I don't have much time in the mornings. Breakfast cookies are the perfect grab and go recipe and they're super easy to meal prep! I like to make a batch every Sunday night so I can enjoy them for breakfast throughout the week – or even as a late night dessert.

With endless flavor options, you'll never get tired of breakfast cookies. These recipes are made with nutritious and filling ingredients like oats, quinoa, nut butters, fresh fruits, and even eggs, so that you'll stay energized and nourished throughout the day.
